RECIPES OF THE WORLD: KATSUDON

The truth is that the Katsudon recipe at first glance it does not seem the easiest in the world ... although there is hope for clumsy kitchens: as we are not people who love to complicate life, we have found a way - perhaps unorthodox but certainly effective - to prepare a katsudon as rich as We ate in Japan.

First of all we are going to tell you what the Katsudon is, because I imagine that your first reaction was this:


Katsudon is a donburi (a bowl of rice) with tonkatsu (breaded pork chop), egg, onion and a sweet soy sauce.

INGREDIENTS (for 2 people)

  • 2 breaded pork chops (* 4 if the 2 people are good to eat)
  • 2 eggs
  • 1 onion
  • 2 servings of white rice

For the sauce:

  • Soy
  • ½ cup dashi broth (we have used broth of a lifetime)
  • Sake (if you have an Asian products store on hand you will surely find it, if not, you can replace it with any brandy, vodka, etc.)
  • Mirin (we don't have it so we've used brown sugar * I know it has nothing to do with it but I already told you that the recipe was not very orthodox! *)

ELABORATION

1- Breaded the chops (we pass them by egg and breadcrumbs) and fry them in sunflower oil.
2- Cut the onions into thin strips.
3- We heat the broth in a casserole (in it we will then put the chops and the egg, so it must be quite large).
4- When the broth is boiling we add the soy sauce (the equivalent of an abundant shot), the sake and the onion. Cook for a couple of minutes over high heat.
5- Add the mirin, or if you don't have it, two tablespoons of brown sugar (jijiji) and let the sauce thicken (in case the sauce thickens too much ... pour a bit of water).
6- Add the breaded chops to the casserole (pass them on both sides).
7- Beat the eggs and add them over the chops and the sauce.
8- Let them cook for a minute over low heat and voila ... the least orthodox katsudon in history (but rich and tasty) is almost ready!
9- Put the rice (ahem, I forgot to tell you that you should have prepared the rice, but you are smart and you will have done it, right?) On a plate and serve it with the chops, the egg and the sauce.
